12 December: TUI Christmas cake from Switzerland

Our colleague Milica Vujcic, Manager Corporate Communications at TUI Suisse, is sharing her delicious TUI cake recipe with you:

Cake

  • 120g butter 
  • 100g sugar
  • 2 eggs
  • 200g wheat flour
  • 30g hazelnut powdered
  • 2 tsp baking powder
  • a pinch of salt
  • 160g vanilla yoghurt
  • 2 tsp vanilla sugar

Preheat oven to 175 degrees top and bottom heat. Beat the soft butter with sugar until fluffy. Add the eggs one at a time and mix well. Mix flour with nuts, baking powder and salt. Add to the egg mixture alternately with the yogurt and vanilla sugar and mix vigorously. Pour the dough into the pan and bake in the preheated oven for about 20 minutes.

Glaze

  • 130g butter
  • 170g powdered sugar
  • 1.5 tsp vanilla sugar
  • 1 tsp vanilla yoghurt

Beat the softened butter until fluffy, gradually stir in sifted powdered sugar, lastly add vanilla and yogurt and if desired food cream. Then pour buttercream on the cooled cake. Recipe is also ideal for cupcakes.
